Comfort food. Hmm. When I don't have to cook, that is comfort food! Bahahahahahaaa! Anyway. When I cook, which is always, because I love to cook, my favourite comfort food has to be my fried chicken or my lasanga, or even for breakfast my homemade saisage gravy and homemade biscuits. My son tears that up, I have to make A LOT. Haha. Gosh, now I'm hungry. Haha.
When I make fried chicken I marinate it first, and not in what you'd expect. I'll give my secret: 2 eggs cracked into a bowl, 4 tbs garlic powder, 4 tbs onion powder, 7 tbs seasoned salt, 1 tbs regular salt, 3 tbs black pepper, 3 tbs paprika, and 5 tbs minced garlic. Let chicken marinate at least 30 minutes to overnight. Then season 6 cups flour with 4 tbs paprika, 4 tbs salt, and 3 tbs black pepper. Dredge chicken in flour and gently place in hot oil, and fry until chicken is done, usually 10 to 15 minutes, or until juices run clear. And they are just the juiciest chicken ever. You have to have a lot of salt to the marinade, makes it juicier, not sure why.
My homemade sausage gravy biscuits is as follows: brown one pound of sausage, then add 4 tbs butter, melt, then add 1/cup flour, add let it cook down 2-3 minutes, then add 2 cups milk, and then my secret ingredients-grate 2 tsp nutmeg, and add 2 tbs Whorechestershire Sauce and let it thicken on low. For the biscuits, I use a Bisquick box and follow the directions on the back. After mixing, I roll it out and cut circles of biscuits out of it, and place in greased baking dishes and continue to roll and cut circles out. And when all are placed on the baking dishes, I brush melted butter on the biscuits, and then grind fresh cracked pepper on top, and bake about 13 to 15 minutes. When they are done, I cut those bad boys up and poor sausage gravy over them, and my son just destroys them.
Gosh, I'm making myself even hungrier. Haha. And I told ya'll my secret ingredients or secret way of marinating and they are so juicy. But I don't mind sharing
