Candied Violets are one of my favorite Spring time tasties that me hubby and I look forward to every year.
Simple to make and delicious to eat, these little candied flowers are sure to be a treat with the kiddies too.
Gather up as many flowers as you feel you want to work with. Make sure they are free from wilt and browning. Put them in a colander and give them a good rinse to wash off any bugs or tiny bits of grass debris. (Leave stems on the flowers till after they have been brushed with the sugar syrup....makes them easier to work with.)
Prepare a sugar syrup by adding about one cup of sugar to around 3/4 cup of water and bring to boil, stirring till all the sugar is dissolved. Allow to boil on medium till syrup becomes fairly thick. Remove from heat and let cool for a few minutes.
Lay out some wax paper on a counter top or table and using a small, flat, soft bristled paint brush gently 'paint' the sugar syrup onto the flower petals till completely coated and then lay on the wax paper to dry.
Once the flowers are dry then you can either leave the stems on or cut them off.
